Determination of ascorbic acid in various vegetables and fruits by polarographic method

In this study, the amount of ascorbic acid in various vegetables and fruits has been determined by the polarographic method. It has been found that, the green vegetables and especially parsley are richer in vitamin C than fruits. Citrus fruits, have more vitamin C in their skin than juice. It has also been investigated that, how boiling, drying and keeping in different conditions effected the decomposition of vitamin C in fruits and vegetables. Keywords :
